Dragon Dictation is a great, free app that enables you to speak to your iPad, and have your words appear on the screen. Write papers, make short notes, and more. The app takes a little getting used to-- it has to learn your voice, and strong accents may confuse it. Slang words and names may need to be typed in manually. It doesn't always get every word right.
